Instructions

  1. Trim excess fat from the beef cheek meat and season with salt, pepper, cumin, paprika, and oregano.
  2. Heat olive oil in a pan over medium heat. Sear the beef cheeks for about 3 minutes per side until browned.
  3. Transfer the meat to a slow cooker or Instant Pot. Add onions, garlic, beef broth, and lime juice. Cook on low for 8 hours (slow cooker) or high pressure for 3 hours (Instant Pot).
  4. Once tender, shred the beef cheeks and mix with the cooking juices. Serve with tortillas, fresh cilantro, and lime wedges.
