For the Cake:
- 1 box chocolate cake mix (or homemade chocolate cake recipe)
- Ingredients required for the cake mix (eggs, oil, water)
For the Coconut Filling:
- 1 cup sweetened condensed milk
- 2 cups shredded sweetened coconut
For the Chocolate Ganache:
- 1 cup heavy cream
- 1 cup semi-sweet chocolate chips
Instructions
- Bake the Cake: Prepare and bake the chocolate cake as per the package instructions in two 8- or 9-inch round pans. Let the cakes cool completely.
- Make the Coconut Filling: In a bowl, mix sweetened condensed milk and shredded coconut until combined.
- Layer the Cake: Place one cake layer on a serving plate. Spread the coconut filling evenly on top. Place the second cake layer over the filling.
- Prepare the Ganache: Heat the heavy cream in a saucepan until just simmering. Remove from heat and pour over the chocolate chips. Let sit for 2 minutes, then whisk until smooth.
- Frost the Cake: Pour the ganache over the assembled cake, spreading it evenly to let it drip down the sides.
- Set and Serve: Allow the cake to set at room temperature or in the refrigerator until the ganache firms up. Slice and enjoy!
Notes
- For extra flavor, toast some shredded coconut and sprinkle it on top of the ganache.
- The cake can be made ahead and stored in the fridge for up to 3 days.
- Add a teaspoon of vanilla extract to the coconut filling for enhanced flavor.
