- 10–12 gyoza (fresh or frozen)
- 4 cups chicken, vegetable, or miso broth
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp grated ginger
- 2 cloves garlic, minced
- 1/2 cup sliced mushrooms (shiitake or button)
- 1/2 cup bok choy or spinach
- 2 green onions, chopped
- 1/2 tsp chili flakes (optional)
- 1 tsp rice vinegar
Instructions
- In a large pot, heat sesame oil over medium heat. Add garlic and ginger, sautéing for about 30 seconds until fragrant.
- Pour in the broth and bring to a gentle simmer. Stir in soy sauce and rice vinegar.
- Carefully drop the gyoza into the simmering broth. If using fresh gyoza, cook for 3-4 minutes. If using frozen, cook for 5-7 minutes until they float to the top.
- Add mushrooms and bok choy (or spinach) and cook for another 2 minutes until tender.
- Ladle the soup into bowls, top with green onions and chili flakes, and enjoy immediately!
Notes
Use high-quality broth for the best flavor. Don’t overcook the gyoza to keep them from falling apart. Try adding shredded chicken, tofu, or shrimp for a protein boost.
