Description

A whimsically festive and creamy cocktail with coconut, vanilla vodka, and a marshmallow garnish—perfect for Easter or springtime celebrations.

Ingredients

Scale
  • 2 oz vanilla vodka (or whipped cream vodka)
  • 1 oz coconut rum (like Malibu)
  • 1 oz heavy cream (or half-and-half)
  • 1 oz cream of coconut (e.g., Coco Lopez)
  • Marshmallow (for garnish)
  • Sweetened shredded coconut (for rim)
  • Honey or corn syrup (to stick coconut)
  • Ice (for shaking)

Instructions

  1. Rim a chilled martini glass with honey or corn syrup, then dip into shredded coconut.
  2. Add ice to a cocktail shaker. Pour in vanilla vodka, coconut rum, heavy cream, and cream of coconut.
  3. Shake vigorously for 20 seconds until icy cold and frothy.
  4. Strain into prepared glass and garnish with a marshmallow on a cocktail pick or float on top.

Notes

For a dairy-free version, use coconut cream and almond milk. You can also batch mix without ice, chill in a mason jar, and shake with ice before serving.
