Ingredients

  • 1 lb (450g) grilled chicken breast or salmon fillet
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 1 cup black beans, cooked
  • 1/2 cup quinoa or brown rice
  • 1/2 cup chopped bell peppers
  • 1/2 cup diced tomatoes
  • 1/4 cup red onions, chopped
  • 1 tbsp extra virgin olive oil
  • 1/2 avocado, sliced
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Season the chicken or fish with garlic powder, smoked paprika, salt, and pepper.
  2. Heat a pan with olive oil over medium heat.
  3. Cook the protein for 5-7 minutes per side, until fully cooked.
  4. Rinse the quinoa and cook it according to package instructions.
  5. Heat the black beans with a bit of water, salt, and lime juice.
  6. On a plate, add a base of quinoa and black beans.
  7. Place the grilled protein on top.
  8. Add chopped bell peppers, tomatoes, and onions.
  9. Garnish with avocado slices and cilantro.
  10. Squeeze fresh lime juice over the top and serve.

Notes

For a low-carb version, swap quinoa for cauliflower rice. For a vegetarian option, replace chicken with grilled tofu and add extra black beans for protein.
