- 1 lb (450g) grilled chicken breast or salmon fillet
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
- 1 cup black beans, cooked
- 1/2 cup quinoa or brown rice
- 1/2 cup chopped bell peppers
- 1/2 cup diced tomatoes
- 1/4 cup red onions, chopped
- 1 tbsp extra virgin olive oil
- 1/2 avocado, sliced
- 1/4 cup cilantro, chopped
- Juice of 1 lime
Instructions
- Season the chicken or fish with garlic powder, smoked paprika, salt, and pepper.
- Heat a pan with olive oil over medium heat.
- Cook the protein for 5-7 minutes per side, until fully cooked.
- Rinse the quinoa and cook it according to package instructions.
- Heat the black beans with a bit of water, salt, and lime juice.
- On a plate, add a base of quinoa and black beans.
- Place the grilled protein on top.
- Add chopped bell peppers, tomatoes, and onions.
- Garnish with avocado slices and cilantro.
- Squeeze fresh lime juice over the top and serve.
Notes
For a low-carb version, swap quinoa for cauliflower rice. For a vegetarian option, replace chicken with grilled tofu and add extra black beans for protein.
